Natural wine has no legal definition, and so it can mean different things to different people, farmers, and winemakers. At Dio it means the grapes were farmed in a sustainable, organic, or biodynamic manner (as few pesticides and chemical sprays as possible). It also means that there are little additives and mechanized processes for removing components from wine, like alcohol or acid. Farmers and winemakers all over the world have embraced the philosophy that heavy-handed chemical use — or any chemical use — is not necessary for good wine. We embrace this approach, and we are excited to offer DC something different.
